My build keeps failing on Jenkins because of this error:

I thought it was because the JavaSquidSensor is no longer needed for SonarQube 5.1 so i removed it:

Above is my plugins folder. I removed the sonar-squid-java-plugin-2.2.1 but I am still getting the same error.

Any ideas on why this is still happening? Running Sonar on Windows-64

You will want to update the SonarQube Java plugin to a more recent version, your error comes from a deprecated API which was removed as of SonarQube 5.1 - and fixed in more recent versions of SonarQube Java (latest as of writing is 3.3).
